Celiac disease is a genetic disorder. In people with celiac disease, eating certain types of protein, called gluten, sets off an autoimmune response that causes damage to the small intestine. This causes the small intestine to lose its ability to absorb the nutrients found in food, leading to malnutrition and a variety of other complications. 

There is no cure. I have attached our informational brochure for your veiwing. There are six flavors to choose from. They come pretopped and individually wrapped to this location to ensure the safest product for our gluten-free customers. The store is not allowed to add any topping because of the possibility of cross contamination. This location has been trained to bake the gluten-free pizzas using seperate pans and utensils. They are available for dine-in, delivery or take and bake, 7 days a week, during regular business hours. We are currently planning 4 meetings and 4 CEOs for 2009. If you would prefer to download it yourself and not receive a copy in the mail, let us know. &lt;br /&gt;&lt;br /&gt;One announcement:  The newsletter that was mailed had the incorrect date for the January CEO at PeiWei.  It is actually Tuesday January 27th, not the 21st.  The version posted here on the blog has the correct date. &lt;br /&gt;&lt;br /&gt;We will be meeting Tuesday, January 27th at PeiWei (pronounced "pay-way") at New Market Square, 21st street and Maize Rd.  We will meet at 6:30. The normal crust is not gluten-free but Barb C. talked to a manager and provided them with a Gluten-Free Pecan Crust recipe.  If you call at least 2 days in advance and talk to a manager, they are willing to make a pie with a gluten free crust so that you can order a slice of pie for desert.&lt;br /&gt;&lt;br /&gt;I tried this and it is very good!  Just remember to ask for a manager (Shawn, John, or Justin are the names I think).  Also stress that it is the gluten free crust and make sure you talk with the manager when you go in for your meal/desert.  A slice of pie is around $4.50 but it is a large slice.&lt;br /&gt;&lt;br /&gt;I actually ordered whole pies.  They charged me $30 plus tax per pie (and gave it to me in pieces), but it was worth it!&lt;br /&gt;&lt;br /&gt;This is the Outback Steakhouse at 21st and Rock. So here is what we received:&lt;br /&gt;&lt;br /&gt;Food for Thought Inc. will be hosting nationally-recognized author Karen DeFelice on Thursday, February 28th at 7:00 p.m.  DeFelice will be speaking on enzymes for autism and other neurological conditions.  During this presentation DeFelice will discuss the basics of enzyme therapy, the digestive process, various special diets (including gluten-free), nutrition and how it all works together.  I am not certain this would be of interest to your entire group, but those with food or gluten-sensitivities (as opposed to CS) would definitely benefit. It will be held Saturday, March 8, at 1pm. The location is the East Evangelical Free Church at 14725 East Harry. Please bring one or two covered dishes and your own table service. Drinks will be provided. Please provide a recipe for each item. This is important for our members with other food allergies and also, if possible, we like to include the recipes from our meetings in the next newsletter.&lt;br /&gt;&lt;br /&gt;Nancy Marrs from Homemade Gourmet will be talking to us about her company's gluten-free mixes and how they can be used to make home-cooked meals easier and faster to prepare.&lt;br /&gt;&lt;br /&gt;Directions to the church: The church is located near 143rd St East and Harry. From Kellogg and K-96, go east about 1/3 mile to 143rd St, turn right(south) and go one mile to Harry. Turn left (east) on Harry and the church will be another 1/3 mile. It is on the south side of the road. I have a friend who cooks for me once a month and then puts everything in individual containers. Kinda like homemade tv dinners, all gluten-free. I generally decide on the menu and then she does the cooking.&lt;br /&gt;&lt;br /&gt;My friend's name is Nancy and she is willing to cook for others, or at least sit down and figure out if it would work for you. The price would probably depend on how often and how long she cooks. You would supply the groceries (unless otherwise arranged) and she would most likely cook at your house to prevent cross-contamination, but since she currently only cooks for me, she is open to other arrangements. Whether you live by yourself and hate to cook (like me) or you have a family and don't have time to cook, this could be a good alternative to Simple Supers or Dream Dinners and other things like that were you may not have much to chose from. Zerhouni, Director, National Institutes of Health (NIH), and formed through public nominations.  The Commission’s mission was to conduct an overview of the state-of-the-science in the field and to develop a digestive diseases research plan consistent with the research mission of NIH for submission to the NIH Director and to Congress.The research plan has been under development by the Commission since its initial meeting on June 12, 2006. We got all the 2008 meetings and CEOs planned (tentatively) and we were able to come up with some ideas for the 2008 newsletters as well.  &lt;br /&gt;&lt;br /&gt;The 2008 meetings will be in March, June, September and December.&lt;br /&gt;2008 CEOs will be in April, July and October.&lt;br /&gt;&lt;br /&gt;As soon as the dates are firmed up I'll add them to the Dates to Remember section (look on the right of this page).  If there is anything you would like to see on the blog or a question you would like answered, email me at the chapter email address.  Be sure to put CELIAC in the subject.&lt;br /&gt;&lt;br /&gt;We have a couple ideas for Celiac Awareness Month next year.  If you have an idea you would like to share please email. &lt;br /&gt;&lt;br /&gt;Also, the National CSA has added a link to our blog under our chapter's info on their website. &lt;br /&gt;&lt;br /&gt;That's it for now. September 13th is the anniversary of the birth of Samuel Gee, the father of modern Celiac Disease.&lt;br /&gt;&lt;br /&gt;For the second year CSA has worked on your behalf with the Senatorial staff and offices leading to the Senate designation of a National Celiac Disease Awareness Day.&lt;br /&gt;The resolution was introduced by Senator James Inhofe of Oklahoma and Senator Ben Nelson of Nebraska . which was considered and agreed to&lt;br /&gt;---------------------------------------------------------------------------&lt;br /&gt;RESOLUTION&lt;br /&gt;Designating September 13, 2007, as `National Celiac Disease Awareness Day'.&lt;br /&gt;&lt;br /&gt;Whereas celiac disease affects approximately 1 in every 130 people in the United States , for a total of 3,000,000 people;&lt;br /&gt;&lt;br /&gt;Whereas the majority of people with celiac disease have yet to be diagnosed;&lt;br /&gt;&lt;br /&gt;Whereas celiac disease is a chronic inflammatory disorder that is classified as both an autoimmune condition and a genetic condition;&lt;br /&gt;&lt;br /&gt;Whereas celiac disease causes damage to the lining of the small intestine, which results in overall malnutrition;&lt;br /&gt;&lt;br /&gt;Whereas, when a person with celiac disease consumes foods that contain certain protein fractions, that person suffers a cell-mediated immune response that damages the villi of the small intestine, interfering with the absorption of nutrients in food and the effectiveness of medications;&lt;br /&gt;&lt;br /&gt;Whereas these problematic protein fractions are found in wheat, barley, rye, and oats, which are used to produce many foods, medications, and vitamins;&lt;br /&gt;&lt;br /&gt;Whereas because celiac disease is a genetic disease, there is an increased incidence of celiac disease in families with a known history of celiac disease;&lt;br /&gt;&lt;br /&gt;Whereas celiac disease is underdiagnosed because the symptoms can be attributed to other conditions and are easily overlooked by doctors and patients;&lt;br /&gt;&lt;br /&gt;Whereas, as recently as 2000, the average person with celiac disease waited 11 years for a correct diagnosis;&lt;br /&gt;&lt;br /&gt;Whereas 1/2 of all people with celiac disease do not show symptoms of the disease;&lt;br /&gt;&lt;br /&gt;Whereas celiac disease is diagnosed by tests that measure the blood for abnormally high levels of the antibodies of immunoglobulin A, anti-tissue transglutaminase, and IgA anti-endomysium antibodies;&lt;br /&gt;&lt;br /&gt;Whereas celiac disease can only be treated by implementing a diet free of wheat, barley, rye, and oats, often called a `gluten-free diet';&lt;br /&gt;&lt;br /&gt;Whereas a delay in the diagnosis of celiac disease can result in damage to the small intestine, which leads to an increased risk for malnutrition, anemia, lymphoma, adenocarcinoma, osteoporosis, miscarriage, congenital malformation, short stature, and disorders of skin and other organs;&lt;br /&gt;&lt;br /&gt;Whereas celiac disease is linked to many autoimmune disorders, including thyroid disease, systemic lupus erythematosus, type 1 diabetes, liver disease, collagen vascular disease, rheumatoid arthritis, and Sjogren's syndrome;&lt;br /&gt;&lt;br /&gt;Whereas the connection between celiac disease and diet was first established by Dr. Samuel Gee, who wrote, `if the patient can be cured at all, it must be by means of diet';&lt;br /&gt;&lt;br /&gt;Whereas Dr. Samuel Gee was born on September 13, 1839; and&lt;br /&gt;&lt;br /&gt;Whereas the Senate is an institution that can raise awareness in the general public and the medical community of celiac disease: Now, therefore, be it&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Resolved, That the Senate--&lt;br /&gt;&lt;br /&gt;(1) designates September 13, 2007, as `National Celiac Disease Awareness Day';&lt;br /&gt;&lt;br /&gt;(2) recognizes that all people of the United States should become more informed and aware of celiac disease;&lt;br /&gt;&lt;br /&gt;(3) calls upon the people of the United States to observe the date with appropriate ceremonies and activities;
