I read an interesting comment about the Chik-Fil-A bun. One person said she would "pass" on the bun. I think if you are newer to the gluten free diet you probably think the bun is not soft enough. I have been doing it for 17 yrs. and have been glad to have a GF bun that holds together so well. It does take some adjustment to change any life long diet habit. Plus, I really think most of us were actually addicted to wheat. It is like losing a best friend! But, the rewards of good health are soooo great! I will never go back to my pre-gluten free days!

I am sorry we have not updated this blog for a while due to surgeries, kitchen remodel, holidays and just LIFE! We are BAAAACK!
I just discovered a great treatment for my eczema. Vitamin E oil! I used it on my leg when it began itching and it never spread to a rash. Eczema is associated with Celiac Disease and can be so discouraging! I have never read a study to use this probably because there would be no money in it. It is a very cheap way to prevent this and will probably improve my immune system and overall health. A 2017 study showed that celiacs still have vitamin deficiencies 10 yrs. after diagnosis. The fat soluble vitamins are one of our problems. I hope this helps someone!
I have heard several people mention a new restaurant: Home Grown. It is across from the new, north Sams Club on north Maize. Can't wait to try it!
I used the new Panko bread crumbs and they were great. Used it for Chicken Parmesan. There is Udi's brand and Ians. There might be more. If we use new products maybe the stores will keep them stocked for us.
